GRILLED PINEAPPLE RECIPE W/ BROWN SUGAR GLAZE

This grilled pineapple recipe is great by itself and fantastic over ice cream or yogurt. You can also skip the butter mixture and use the grilled pineapple as the base for salsa.

INGREDIENTS

  • 1 pineapple
  • ¾ stick butter
  • ¾ C brown sugar

DIRECTIONS

In a bowl, soften the butter slowly until melted. Add the brown sugar and stir quickly to combine. This will take a minute or so for the sugar to absorb. Preheat your Kong to 350 degrees.

Take a knife and peel your pineapple, slicing into ¾-inch slices. Place the slices on your Kong and let cook about 5 to 7 minutes per side. You are looking just to get some good color and grill marks on the first side before flipping and repeating.

Once done, remove pineapple slices and quickly brush the butter mixture on each side of the pineapple. Serve quickly.
