GOLD N BOLD PEAMEAL SANDWICH

INGREDIENTS

  • 5 lbs pork loin
  • 4 liters (1 gallon) water
  • 1/2 c kosher salt
  • 1 liter apple juice
  • 3 tablespoons ready cure
  • 1 c brown sugar
  • 1 tbsp all spice
  • 1 tbsp juniper berries
  • 2 tbsp mustard seed
  • 2 tbsp coriander seed
  • 1 tbsp Black peppercorn
  • 1 tbsp whole clove
  • 3 bay leaves
  • 2 c fine cornmeal
  • 11/2 c Gold n Bold
  • 2 tbsp Grainy mustard
  • 1/2 tbsp honey

DIRECTIONS

  • Combine all ingredients except pork loin and corn meal in large pot and bring to a boil.
  • Let simmer for minutes or until all dry ingredients have dissolved
  • Let fully cool
  • In airtight bag place pork loin and fully submerged pork loin.
  • Keep fully submerged for 5 days in refrigerator.
  • After 5 days remove from bag and rinse under cold water for 3-5 minutes.
  • Pat dry and roll in corn meal until fully coated.
  • Cooking peameal bacon
  • Run your smoker at 250-275
  • Smoke until internal temp reaches 155 f.
  • Coat peameal in mustard glaze and let cook
