Bacon Wrapped Sea Scallops
These bacon wrapped diver scallops are delicious, easy, and work as an impressive appetizer or main course! The flavors from this delicate, yet lightly smoked, dish will take you to the ocean even if you lives many miles away.
- 2 pounds sea scallops (10-20 per pound)
- 1 pound of thinly sliced bacon, cut in halves
- Grilla Grills A.P. Rub, to taste
1.) Preheat your Grilla Grill to 225 degrees.
2.) Pat scallops dry and wrap each one with a thin slice of bacon. (Really important to use thin bacon here!)
3.) Season the wrapped scallops with the All Purpose rub.
4.) Place prepared scallops on the grill and smoke for 30-40 minutes or until translucent in the middle. (We are looking for them to be about 125 degrees if you use a thermometer.)
OPTIONAL: Squeeze some fresh lemon juice over the smoked scallops before serving.
