Chicken Tortilla Soup
This old school classic, from our neighbors to the south, is as delicious as it is timeless! It takes no time to put together, it’s easy on the wallet, and it is a sure fire bet that your family will love it! So give this recipe and try and ENJOY!
- I roasting chicken, smoked and shredded (recipe at grillagrills.com)
- 2 tablespoons olive oil
- 1 onion, diced
- 5 cloves garlic, minced
- 2 jalapeño peppers, seeded and diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 can crushed tomatoes
- 1 can Rotel
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 3 cups chicken stock
- 1/4 cup cilantro, chopped
- Juice of one lime
- Tortilla Chip Strips
- 1 avocado, sliced (garnish)
- Kosher salt, to taste
- Black pepper, to taste
In a large pot, heat the olive oil and cook the onions, garlic and peppers until the onions are translucent.
Add the chicken stock first and then the rest of the ingredients, except for the tortilla chips and the avocado.
Bring to a boil and then reduce to a simmer for 30 minutes.
Spoon into bowls, garnish with the avocado and chips.
