Dawgfatha's Grilled Shrimp Tacos
The Dawgfatha strikes again with this awesome dish that literally yells summertime! These shrimp tacos are easy to make, packed full of flavor, and pair well with poolside libations! SO, as our friend Ace Ventura would say, “Let’s throw another shrimp on the barbie.” ENJOY!
- 1 pound shrimp, pealed and deveined
- Grilla Grills All Purpose Rub, to taste
- 1 tablespoon cooking oil
- Cotija cheese
- Corn tortillas
- 1 cup tomatoes, chopped
- 1/2 cup red onion, chopped
- 1 cup whole kernel corn
- 1/2 cup cilantro, chopped
- 2 tablespoons garlic, minced
- 1 jalapeno, seeded and diced
- 1/4 cup fresh lime juice
- Kosher salt, to taste
- Ground black pepper, to taste
FOR THE TACOS:
Preheat your grill to medium-high heat.
In a bowl, toss the shrimp, cooking oil, and all purpose rub together to coat evenly.
Grill the shrimp for 1-2 minutes on each side, remove from grill, and set aside.
Gently heat the corn tortillas on the grill; about 20 seconds on each side.
Combine the shrimp, cheese and corn salsa (recipe below), together in the tortilla and ENJOY!
FOR THE CORN SALSA:
In a medium mixing bowl, combine all of the ingredients and mix thoroughly.
Cover and refrigerate for at least 4 hours so that the flavors can meld.
Serve with your tacos and ENJOY!
