Peruvian Holiday Applesauce
In Peru, the holidays are a special time of year and they eat many things depending on location. If you are near the ocean then it’s ceviche for you, but if you are more inland, or in the mountains, then you will most likely be celebrating with roasted pork, potatoes, and applesauce. SO, give this easy recipe a try and you will have the ultimate Peruvian holiday side dish. ENJOY!
- 4 pound of apples; peeled, cored, and sliced
- 1 1/2 cups water
- Juice of two whole lemons
- 3 tablespoons dark brown sugar
Place the apples, water, and lemon juice in to a pot and bring to a boil.
Reduce to a simmer and cook for 30 minutes, or until the apples are very soft and falling apart.
Put the cooked apples into a food processor and pulse until they become smooth with a few small chunks.
Let cool to room temperature.
