Smoked Chicken Meatballs
“Mama Mia, that’s a spicy meatball!” If you are in the mood for meatballs then this recipe is a must, and it does not hurt that it is a bit more healthy than it’s beef counterpart. SO, do not waste any time, crack open a bottle of wine and get to it. ENJOY!
- 1 pound ground chicken
- 1 egg, beaten
- 1/2 cup Italian bread crumbs
- 1 small onion, finely diced
- 5 cloves garlic, minced
- 1/3 cup grated parmesan cheese
- Kosher salt, to taste
- 1 tablespoon, Grilla Grills "What Da Cluck" Seasoning
- 2 teaspoons, red pepper flakes
- Black pepper, to taste
Preheat your smoker to 325 degrees.
In a large bowl, combine all of the ingredients and mix until well incorporated.
Using a 2 oz. scoop, portion the meat mixture into individual portions and form into tight balls.
Place the prepared meatballs onto a lightly greased tray and put in the smoker for 30-45 minutes, or until your reach an internal temp of 165 degrees.
