Smoked Lamb Shank
Smoked lamb shank is a great dish that can be used in so many innovative and delicious ways. - Six 1 pound lamb shanks
- 1 cup Drew's Kitchen Sink Spice Rub (recipe at grillagrills.com)
- 1/4 cup olive oil
Preheat smoker to 225 degrees.
Liberally drizzle the olive oil over the lamb shanks and coat evenly.
Apply the spice rub to the shanks and rub all over, to ensure all sides are completely covered in the rub.
Place the seasoned shanks onto the smoker for 4-6 hours or until you have an internal temperature of 160 degrees.
Remove the shanks from the smoker and wrap each one twice in aluminum foil.
Return the shanks to the smoker until you have an internal temperature of 190 degrees; about 2-3 hours.
Remove from the smoker and let rest, in the foil, for one hour.
Remove foil and ENJOY!
