Smoked Reverse Sear Strip Loin

- 1, five pound whole beef strip loin
- 2 tablespoons canola oil
- Kosher salt
- Ground black pepper
Let your strip loin set out at room temperature for one hour.
Preheat your smoker to 275 degrees.
Coat the strip loin evenly on all sides with the canola oil.
Liberally season the loin, on all sides, with the salt and pepper.
Place the seasoned strip into the smoker for 1.5 hours or until you have an internal temperature of 110 degrees.
Remove from the smoker and let rest for ten minutes.
While the beef is resting, heat a cast iron skillet on the stove until searing hot.
Place the rested beef into the skillet and sear 3-4 minutes on each side.
Remove from the skillet and let rest for another ten minutes.
Slice, serve, and ENJOY!
