South of the Border Smoked Drumsticks
This recipe gives a nod to our neighbors to the south as it utilizes a very traditional Mexican spice blend and is packed full of flavor. SO, pour yourself a tall margarita, fire up the smoker, and ENJOY!
- 12 chicken drumsticks
- 1/4 cup vegetable oil
- 1/3 cup Tajin seasoning
- 1/8 cup kosher salt
Place the drumsticks on a rack over a dripping tray and refrigerate for at least 8 hours or overnight.
Heat your smoker to 275 degrees.
In a gallon size zip lock bag combine the oil, Tajin, salt, and drumsticks; seal the bag shut.
Shake the bag vigorously until the chicken becomes evenly coated; this may be done in batches, should you wish.
Place the seasoned chicken in the smoker and cook until you have an internal temperature of 165 degrees; about two hours.
Remove from smoker and let rest for 15 minutes.
