St. Louis Style Pork Steaks
This St. Louis staple has been called everything from “the poor man’s steak” to “the working man’s delight.” We here at Grilla Grills just call it plain ol’ delicious, because there is nothing poor about the insane flavor that these steaks have! Cut from the pork shoulder, into roughly one inch steaks, these pieces of meat have a perfect protein to fat ratio, making them a true delicacy.
- 6 one-inch pork steaks, cut from the shoulder
- Grilla Grills All Purpose Rub, to taste
- 1 cup BBQ sauce
- 1 can of beer
Generously season the steaks with the A.P. rub and grill for 6 minutes on each side, or until you reach your desired level of doneness. Transfer the steaks to an aluminum container and pour in the BBQ sauce and the beer until the liquid covers at least 3/4 of the meat; do NOT completely submerge. Cover with foil and place in a 250 degree smoker for 2-3 hours or until fork tender. Remove from heat, rest for ten minutes, and enjoy!
