If you have any left over watermelon in the frig or just want an easy “cocktail” to put in the cooler and take to the beach with you, give this recipe a go. Cheers!
- 1 small seedless watermelon, cut into one-inch wedges
- 1 cup water
- 3/4 cup granulated sugar
- 1/2 cup tequila
- 1/4 cup triple sec
- 2 limes, cut into wedges
- Coarse salt, to taste
Arrange the watermelon slices in a pan and set aside.
In a medium saucepan, bring the tequila, triple sec, water, and sugar to a boil; let boil for 2 minutes.
Let the syrup cool and pour over the watermelon.
Refrigerate for at least one hour.
Remove the watermelon from the pan and place on a platter, squeeze the limes over the top and garnish with the salt.
