- 1 pound Thai chilis, chopped
- 36 cloves garlic
- 1 cup white vinegar
- 1/2 cup brown sugar
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
In a medium sauce pan, combine all of the ingredients and bring to a boil.
Reduce to a simmer and cook for 10 minutes.
Remove from the heat and let the mixture come to room temperature.
Puree the mixture in a food processor or blender.
Strain the sauce and it is ready to bottle.
NOTE: You may need to thin out the sauce after it is pureed. If you do, simply add a little extra vinegar.
